{Recipe} Healthy Gluten-Free and Vegan Brownies

Hi.

This is yet another food post. But, it is one you won’t regret and forget! This is a healthy, no flour/gluten-free vegan brownie (wow, that is a long title!) and I swear, it doesn’t even taste healthy. It actually taste like chocolate fudge goodness. I actually did not create this recipe, I found it on this website. The only ingredient I changed was the chocolate, which were not vegan.

See how beautiful they look? They don’t even look that different from a real brownie! They are fudgey and chocolatey, the perfect brownie combo. I literally ate all of these in a few days. They are that good. A fun thing about this recipe is that you don’t feel guilty after eating a few, since they are pretty healthy. Plus, since they are baked in a muffin pan, you have 12 similar portions so you won’t over eat! I am in love with these brownies, I hope you will too.


Healthy, Gluten-Free and Vegan Brownies

brownies1 can of black beans, rinsed and dried
2 1/2 tbsp flaxseed meal
6 tbsp of cold coffee
3 tbsp melted coconut oil
3/4 cup cocoa powder
1/4 cinnamon
1/4 tsp salt
1 tsp pure vanilla extract
2/3 cup maple syrup
1/4 cup peanut butter
1 1/2 tsp baking powder
1 cup of chocolate chips

1. Go ahead and preheat your oven to 350, then line your cupcake pan with liners or with non-stick spray
2. Remove liquid from the can of beans, rinse and dry with paper towels
3. If you don’t have flaxseed meal, take a couple tablespoons of flax seed and blend it in the blended until it becomes like powder. Then, take 2 1/2 tbsp of it and put it in your coffee. Stir and leave it for a bit.
4. Go ahead and melt your coconut oil.
5. Put everything except the chocolate in a food processor. Mix thoroughly until everything is smooth.
6. Add chocolate chips and pulse 2-3 times so it won’t break.
7. Use an ice cream scoop to place the batter evenly in your liners. Add some chocolate chips on top if wanted.
8. Bake for 20-30 minutes or until firm at the edges
9. Only remove from the pan when completely cooled.
